Thai Basil Fried Rice

My favorite meal of the day is breakfast and my two favorite foods are rice and eggs.  Here’s a recipe that includes both of those, my breakfast thai basil fried rice with turkey sausage.

Breakfast Thai Basil Fried Rice with Turkey Sausage

4 spicy turkey sausage links, meat removed from casings

1/2 cup scallions (green onion), chopped
1 sweet long red pepper, diced
3 Serrano peppers, diced
2 cups fresh basil, chopped
4 garlic cloves, minced
4 cups cooked jasmine rice, cooled
4 tbsp oyster sauce
1.4 cup mushroom flavored soy sauce
1/4 cup peanut oil
4 large eggs, fried over easy
black pepper

Heat oil in a large skillet or wok over medium high heat. Add sausage, chicken, and garlic to skillet. Sauté until chicken and sausage are cooked (approximately 8-10 minutes). Stir in scallions and peppers. Stir fry ingredients for 5 minutes. Stir in rice, soy sauce, and oyster sauce. Mix all ingredients well and continue to stir fry for 8-10 minutes or until rice is well heated. Reduce heat, and stir in basil. Mix well. Cover for 5 minutes then remove from heat.

Transfer rice to platter and top with eggs.  Serve warm.
