Three Easy Recipes For Your Self-Made Dinner Date Night

So it’s dinner date night, you’ve got a great girl and you want to impress.  Maybe you’ve thought of taking her for drinks or out dancing.  This time though, you want to do something more personal.  You come up with the idea that you’re going to cook for her.  Only problem is, you have no idea what to make.

Don’t worry we’ve got you covered.  Here are three easy recipes that’ll get you both involved without being over the stove all night.

Appetizer:
Blistered Tomato Crostini with Whipped Ricotta

What you’ll need:
A box of cherry or grape tomatoes
An ounce of Pancetta
Good quality bread (Italian Loaf or something from the bakery section)
Salt and Pepper
Teaspoon of Sugar
Tablespoon of Crushed red pepper
Olive Oil
½ cup Ricotta
Tarragon

 

Preheat the oven to 400 degrees.

Dice the Pancetta into bite sized pieces and half the tomatoes.  Oil a baking pan with the olive oil; throw in tomatoes, crushed red pepper and salt and pepper to taste.  That should cook for around ten minutes or until the tomatoes are blistered.  In the meantime cook the pancetta in a pan until gold brown and set aside.

While everything cooks, put the ricotta in a chilled bowl and whip with a splash of olive oil and salt and pepper.  Just before taking the tomatoes out of the oven, slice the bread and toast them.

To assemble, spread the whipped ricotta on the bread then place pancetta and tomatoes on top.  Garnish with tarragon.

*Split up the tasks while you’re cooking, it gets everybody involved and the food out quicker

Entrée:  Best Damn Spaghetti Recipe

What you’ll need”

One box of Spaghetti,
Can of San Marzano Tomatoes (Available in any grocery store)
Basil
Teaspoon of Crushed Red Pepper
Two Cloves of Garlic
Salt
Olive Oil
Unsalted Butter (Optional)

 

Boil a pot of water seasoned with salt and a splash of olive oil.

While the water boils, heat one pan with the canned tomatoes and one with two table spoons of olive oil, garlic, crushed red pepper, leaves of basil.  Let the oil infuse under low heat until fragrant, then strain and combine the oil with the tomatoes.  Cook the pasta to the box’s instructions and drain.

Combine pasta and sauce together and finish with a tablespoon of butter.

*Don’t wash the pasta when draining.  Starch in the pasta water helps the sauce stick.

 

Desert:  Lemon Semifreddo with Strawberries  (pictured above)

What you’ll need:

½ Cup Store Bought Lemon Curd

½ Cup Heavy Cream

Handful of Shortbread Cookies

1 Pint Strawberries

2 Tablespoons of Sugar

Cut Strawberries into slices and combine with sugar, set aside for thirty minutes.

Whip heavy whipping cream until soft peaks.  If you have an electric mixer than use one (unless you want to show off your muscles by whipping it yourself).  Add lemon curd and combine.  Freeze for at least an hour.

Serve with strawberries and crushed Shortbread cookies.
